SWEET POTATO CHIPS




This is a tasty recipe and can help with some of those comfort food cravings that we tend to deal with when switching to a healthy, organic, clean diet.


The only word of caution I have for you is if you suffer from Insulin Resistance this will trigger you. You will have to heal your insulin resistance and I talk how to do that in the Inflammation videos.


SWEET POTATO CHIPS:


2 Large Sweet Potatoes

¼ cup extra virgin olive oil

1 TBSP salt

2 tsp chili powder (optional!! not everyone can tolerate this!)

1-2 tsp freshly ground pepper


Preheat oven to 450 degrees and line a baking sheet with parchment paper.

Cut the sweet potatoes and place them in a bowl. Add the oil and toss to coat. Sprinkle the wedges with the spices and arrange in a single layer on the baking sheet.

Bake for 25-30 minutes, turning after about 15 minutes. Cool for about 5 minutes before serving.


VARIATION

2-3 TBSP coconut oil

2 TBSP Cinnamon

2-3 TBSP Maple


Bake 20-30 minutes. Heat coconut oil in skillet and add in potatoes from the oven – fry up till golden brown. Remove from heat and put in a big bowl and toss with cinnamon and maple syrup.
