Gluten Free GERMAN APPLE PANCAKES

4 eggs (or egg substitute)

3/4 cup GF flour (or sweet rice flour)

1/2 tsp salt

3/4 milk (or your milk substitute - coconut vanilla is good)

1/4 cup coconut sugar (or substitute with stevia)

1/2 tsp cinnamon

4 TBSP of dairy free butter (divided)

2 medium apples, peeled if desired and thinly sliced


Preheat oven to 400. Place two pie pans in the oven to heat. Beat the eggs, flour, milk, and salt on medium speed for 1 minute. In a small bowl, combine the sugar and cinnamon and set aside. Take the pans out of the oven and put 2 TBSP in each pan, moving it to coat the pan. Sprinkle with cinnamon sugar. Bake at 400 for 20-25 minutes until golden brown and puffy. Serve immediately.


(note: GF flour doesn't rise quite as nice as regular flour)
