Coconut Flour Brownies




Prep Time: 45 minutes

Servings: 10 to 12


Ingredients:

1/2 cup sifted coconut flour (or gluten free all purpose flour)**

1/2 cup cocoa powder, unsweetened

1 cup raw honey

1/3 cup coconut oil, melted

6 large eggs (or egg substitute)

1 tsp vanilla extract

Pinch of salt


Preparation:

1. Preheat oven to 350 degrees F and lightly grease a square glass baking dish.

2. Whisk together the melted coconut oil and the cocoa powder in a bowl.

3. In a separate bowl, beat together the honey, eggs, vanilla extract and salt until light and fluffy.

4. Beat in the coconut oil mixture then add the coconut flour a little at a time.

5. Pour the batter into the baking dish and bake for 30 to 35 minutes until a knife inserted in the cent comes out clean.

6. Cool completely before cutting to serve.

** Note: you can use any flour, I found the gluten free all purpose flour more cake like, and the coconut flour to be more grainy.
